Coconut Cherry Pie in My Eye

I've gotten a little behind again with blog posts - oops! I made these on November 2nd and got on a sort of coconut trend since it seems to help boost the caloric content and taste of the Power Balls. Check it out.

Laura's Cherry Coconut Power Balls

Mix Dry Ingredients & Coconut:
2.5 c. Oats
0.5 c. White Rice Flour
0.25 c. Flaxseed Meal
0.5 c. Wheat Bran
2 scoops Chocolate Protein Powder
0.5 c. Coconut

Mix Wet Ingredients:
2 Egg Whites
1 tsp Vanilla
1 21oz can Cherry Pie Filling

Combine Wet and Dry Ingredients. 

Drop by rounded tablespoon onto greased cookie sheets.
Bake at 325F for 8-10 minutes.

Makes Approximately 59 Power Balls.
