You Know What October Means... PUMPKIN! Currant Power Balls

It also means I'm almost done (1 away!) with med school applications - hooray! So look out for better posts soon, but in the meantime enjoy the start of pumpkin season with these balls:

Laura's Pumpkin Currant Power Balls

Combine 1 c. Bulgar Wheat with 1.5 c Water. 
Let soak for 1 hour.

Mix Dry Ingredients:
4 c. Oats, chopped
0.25 c. Flaxseed Meal
0.5 c. Brown Rice Flour
1 tsp Cinnamon
0.5 tsp Nutmeg
1 tsp Pumpkin Pie Spice

Mix Wet Ingredients:
15 oz. Canned Pumpkin!
0.25 c. Syrup
2 Egg Whites
0.5 c. Grapefruit Juice
1 tsp Vanilla
0.5 c. Dried Currants
Bulgar & Water Mixture

Combine Wet and Dry Ingredients.

Drop by rounded tablespoon onto greased cookie sheets.
Bake at 325F for 8-10 minutes.


Makes approximately 97 Power Balls.
