Endings - A Final Coconut Pineapple Power Ball

With the end of the cross-country season this weekend, the end of Power Balls is imminent. Per a special request for Power Balls for my alma mater, I had one last chance opportunity to support the Blue Jays (note: not blue devils) as both the women and men (for the first time!) head off to Wisconsin for their championship race. Laura's Coconut Pineapple Power Balls

Mix Dry Ingredients:
5 c. Oats
0.5 c. Flaxseed Meal
1 c. Wheat Bran
0.5 c. White Rice Flour
1.5 c. Coconut
5 scoops Chocolate Protein Powder

Mix Wet Ingredients:
3 Egg Whites
1 tsp Vanilla
1 20oz can Crushed Pineapple
0.5 c. Orange Juice
0.5 c. Water

Combine Wet and Dry Ingredients.

Drop by rounded tablespoon onto greased cookie sheets.
Bake at 325F for 10 minutes.

Makes Approximately 98 Power Balls.

Another Strawberry Banana

Strawberry banana seems to be another favorite, so here's yet another version of these tasty Power Balls. No coconut today!

Laura's Banana Strawberry Pie Power Balls

Mix Dry Ingredients:
2.5 c. Oats
0.5 c. Wheat Bran
0.5 c. White Rice Flour
0.25 c. Flaxseed Meal
3 scoops Chocolate Protein Powder

Mix Wet Ingredients:
2 Bananas (mashed)
20 oz Strawberry Pie Filling
2 Egg Whites
1 tsp Vanilla

Combine Wet and Dry Ingredients.

Drop by rounded tablespoon onto greased cookie sheets.
Bake at 325F for 8-10 minutes. 

Makes Approximately 66 Power Balls.

Coconut Apple Pie

And now the last of the coconut-fruit Power Balls. I know it sounds a little strange to combine apple pie and coconut, but I think it was pretty tasty - so try it!

Mix Dry Ingredients:
2.5 c. Oats
0.5 c. White Rice Flour
0.25 c. Flaxseed Mal
0.5 c. Wheat Bran
3 scoops Chocolate Protein Powder
0.5 c. Coconut
1 tsp Cinnamon

Mix Wet Ingredients:
20 oz Canned Apple Pie Filling
2 Egg Whites
1 tsp Vanilla
0.25 c. Orange Juice

Combine Wet and Dry Ingredients.

Run Fast Blue Devils! These Power Balls Are Waiting For You To Eat Them!

Despite attempts to remain relatively anonymous in my affiliations, that seems rather difficult given the title of this blog stemming from the name I've given these Power Balls: Blue Devil Power Balls. Tomorrow is the big ACC cross-country meet, so in honor of that I thought I'd show some team pride with Power Balls named after a certain school's mascot. There's blue from the dried blueberries and white from the white chocolate chips and coconut, so hopefully they'll replenish the Blue Devils that cross the finish line tomorrow!

Laura's Blue Devil Power Balls

Mix Dry Ingredients:
3 c. Oats
3 scoops Vanilla Protein Powder
0.5 c. Wheat Bran
0.5 c. White Rice Flour
0.25 c. Flaxseed Meal
0.5 c. Dried Shredded Coconut
0.5 c. White Chocolate Chips
0.75 c. Dried Blueberries

Mix Wet Ingredients:
2 Egg Whites
1.5 c. Applesauce
0.5 c. Water

Uncreative Title #2: Banana Chocolate Chip Power Balls

Since everyone knows banana bread with chocolate chips is delicious, I decided to try to recreate that with these Power Balls. It's a pretty straightforward recipe, but I found there weren't quite enough wet ingredients, so I added some water and that seemed to make things better. I've also just realized that I think I've been turning my camera off too quickly after taking that picture, since I seem to missing some pictures that I was pretty sure I took. Sorry for the lack of pictures :( I'll stop doing that after the next post.

Laura's Banana Chocolate Chip Power Balls

Mix Dry Ingredients:
3 c. Oats
3 scoops Chocolate Protein Powder
0.5 c. White Rice Flour
0.5 c. Wheat Bran
0.25 c. Flaxseed Meal

Uncreative Title #1: Orange Coconut Blueberry

These Power Balls were inspired by people's demands for more Power Balls with coconut in them and a can of mandarin oranges and some blueberry Craisin's in my pantry. At first I was a little suspicious about using mandarin oranges in Power Balls, but they gave it a little orange kick that I think turned out deliciously. Here's the recipe:

Laura's Orange Coconut Blueberry Power Balls

Mix Dry Ingredients:
3 c. Oats
3 Scoops Chocolate Protein Powder
0.5. c. White Rice Flour
0.25 c. Flaxseed Meal
0.5 c. Wheat Bran 

Mix Wet Ingredients:
0.5 c. Orange Juice
1 tsp Vanilla
1 10.5oz Can Mandarin Oranges, crush with whisk
2 Egg Whites
Combine Wet and Dry Ingredients.
Mix in:
0.67 c. Dried Shredded Coconut
1 c. Dried Blueberry Craisins

Drop by rounded tablespoon onto greased cookie sheets.
Bake at 325F for 8-10 minutes.

Catching Up... Pineapple Coconut Cake

After falling a little bit behind on my blog posting duties, but not Power Ball making duties, watch out for 3 posts all in a row! Bam Bam Bam! These Power Balls, while similar to my previous Pina Colada Power Balls, had a different texture after running out of oats and instead using a mixture of various previously used dry ingredients plus some apple cider instead of grapefruit or orange juice. I think they were deemed pretty tasty though, so hooray for making power balls without going to the grocery store! Here's the recipe:

Laura's Pineapple Coconut Power Balls

Mix Dry Ingredients:
6 c. Ritz Bitz, chopped
1 c. Graham Cracker Crumbs
0.5 c. Flaxseed Meal
1 c. Wheat Bran
0.5 c. White Rice Flour
3 Scoops Chocolate Protein Powder

Mix Wet Ingredients:
1 20oz can Crushed Pineapple
2 Egg Whites
1 tsp. Vanilla
0.5 c. Apple Cider
1 c. Dried Shredded Coconut

A Little Bit of Summer in Autumn...Coconut Blueberry Power Balls

And now since I'm catching up on my posting, my most recent creation as of today are Blueberry Coconut Power Balls! With I think one of the least amount of ingredients I've ever used! This recipe also reminded me of my very first power ball creations of Coconut Banana Bread and then Blueberry Yogurt and how many recipes I've made so far - a lot! And hopefully more to come! So here ya go!

Laura's Blueberry Coconut Power Balls

Mix Dry Ingredients:
2 c. Oats
0.5 c. Wheat Bran
0.5 c. Flaxseed Meal
0.5 c. White Rice Flour
3 Scoops Vanilla Protein Powder
0.5 c. Dried Coconut

Mix Wet Ingredients:
1 can Blueberry Pie Filling (21 oz)
2 Egg Whites
1 tsp Vanilla
0.25 c. Orange Juice

Combine Wet and Dry Ingredients.

Bake at 325F for 8-10 minutes until golden brown.

Back! And Mint Chocolate Chip Power Balls

Sorry for the little hiatus from posting about power balls, but it's back! And with mint chocolate chip power balls! To get that minty-chocolatey taste I used cocoa powder, mint extract, and chopped up Andes Mints Bits. I didn't really know what to use as a good liquid, so ended up mushing up 2 bananas and added a little more grapefruit juice than usual. Overall though, I think they turned out well, so here's the recipe:

Laura's Mint Chocolate Chip Power Balls

Mix Dry Ingredients:
4 c. Oats
3 scoops Chocolate Protein Powder
0.25 c. White Rice Flour
0.25 c. Flaxseed Meal
0.25 c. Cocoa Powder
0. 25 c. Wheat Bran

Mix Wet Ingredients:
2 Egg Whites
0.75 c. Grapefruit Juice
2 Bananas
0.5 tsp Mint Extract

Combine Wet and Dry Ingredients.
Add 0.75 c. Andes Mints Bits.

Drop by rounded tablespoon onto greased cookie sheets.
Bake at 325F for 8-10 minutes.

No Mint, So... Strawberry Banana Power Balls!

I know I said I was thinking of making mint chocolate chip or chocolate mint Power Balls for Wednesday, but I didn't have any mint, so instead made Strawberry Banana Power Balls! Not to be confused with the previously made Strawberry Banana Smoothie Power Balls - these don't have yogurt in them - are a little bit more pink, but just as tasty! I also had run out of Bulgar Wheat and so tried to add more oats mixed with some water, but think that was a bad choice, since the batter was a little liquidy, but then the PBs are more moist, so maybe that's good! Here's the recipe:

Laura's Strawberry Banana Power Balls

Mix Dry Ingredients:
4.5 c. Oats + 1.5 c. Water
3 scoops Chocolate Protein Powder
0.5 c. Wheat Bran
0.25 c. Flaxseed Meal
0.25 c. White Rice Flour

Mash Together:
2 Bananas
21 oz. Strawberry Pie Filling

Mix With Wet Ingredients:
0.5 c. Grapefruit Juice
2 Egg Whites

Combine Wet and Dry Ingredients.

Drop by rounded tablespoon onto greased cookie sheets.
Bake at 325F for 12-15 minutes. 

Makes approximately 87 Power Balls.

99 Balls of Cinnamon Apple Pie on the Wall...

With all this fall weather I've been inspired to try to stick to the fundamental flavors of fall. And so came up with another apple-based Power Ball (previous apple-based PBs were the Caramel Apple PBs) this time with apple pie filling instead of fresh apples and no caramel bits. Hence...

Laura's Cinnamon Apple Pie Power Balls

Combine 1.25c Bulgar Wheat with 1.75c Water. 
Let soak for ~1 hour.

Mix Dry Ingredients:
3.5 c Oats, chopped
3 scoops Vanilla Protein Powder
0.5 c. Wheat Bran
0.5 c. Flaxseed Meal
0.5 c. White Rice Flour
1.5 tsp Cinnamon

Mix Wet Ingredients:
1 can (15 oz) Apple Pie Filling
0.75 c. Applesauce
0.5 c. Grapefruit Juice
1 tsp Vanilla

Combine Wet & Dry Ingredients:

Add Bulgar Wheat & Water Mixture. 

Drop by rounded tablespoon onto greased cookie sheets.
Bake at 325F for 10-11 minutes.


Makes approximately 99 balls.
